Title: Easy Peanut Butter Soup

2 Habanero pepper; or to taste
2 lg Plum tomatoes
1 Onion; divided
Fresh ginger (1")
3 cl Garlic
2 lb Chicken thighs
2 ts Paprika
Cayenne pepper; to taste
Salt & pepper; to taste
4 tb Oil; up to 6 tb
Onion;
- remaining half, sliced
1 tb Tomato paste
2 Bay leaves
1 ts Thyme
2 ts Bouillon powder or 2 cubes
1/2 c Peanut butter; unsweetened
Salt & pepper; to taste
2 c Chicken stock; up to 3 c
Spinach; handful (optional)
Preparation time: 15 minutes
Cooking time: 40 minutes
Rich, creamy, and deeply savory West African-inspired peanut butter
soup with tender chicken. It's bold, comforting, and ready in under
an hour.
Add the tomatoes, half the onion, habanero pepper, ginger, and garlic
to a blender. Blend until smooth and set aside.
Season chicken with paprika, salt, and black pepper. Set aside
Heat the oil in a large pot over medium-high heat. Fry the chicken for
about 5 minutes on each side until well browned. Remove and set aside.
Add the sliced onion to the same oil and cook over medium heat for 3
to 5 minutes until soft and lightly golden.
Stir in the blended sauce, tomato paste, and bay leaves and cook for
about 6 to 10 minutes or until the sauce is well reduced and the raw
tomato taste is gone.
Add the peanut paste and chicken stock, and stir well until the peanut
butter dissolves. Season with salt, pepper, seasoning powder, and
thyme.
Return the chicken to the sauce and cook over medium-low heat for
another 15 to 20 minutes, or until the chicken is cooked through and
the soup has thickened to your liking.
Stir in the spinach in the last 2 minutes and allow to wilt. Taste for
seasoning and serve hot.
