1 tb Extra virgin olive oil
- (15 ml)
1/2 lg Red onion (75 g);
- finely diced
4 cl Garlic (12 g); minced
3/4 ts Sea salt (3.75 g)
1/4 ts Ground black pepper (0.5 g)
1 tb Italian seasoning (3 g)
1/3 c Dry white wine (80 ml)
1 1/2 c Canned cannellini beans
- (250 g)
24 oz Jar tomato sauce (680 g)
1 ts Liquid smoke (5 ml)
1/2 c Spinach (15 g)
Squeeze of lime (5 ml)

Preparation time: 10 minutes
Cooking time: 20 minutes
These 30-minute smoky white beans in tomato sauce are so cozy and
flavourful. Made with liquid smoke and plenty of garlic, they're
amazing on toast for breakfast, lunch, or dinner.
In a pan over medium high heat, heat the olive oil. Add in the red
onions and the garlic and saute for 5 minutes until the onions are
translucent.
Add in the sea salt, black pepper and the Italian seasoning. Reduce
heat to medium and let it cook down a little, then add in the white
wine. Stir to combine and cook together for about 3 minutes to take a
bit of a sauce.
Add in the cannellini beans, the tomato sauce, and the liquid smoke.
Stir thoroughly to combine. Bring the mixture back to high heat for 2
minutes, then lower to a simmer for 8 minutes. Stir once, then allow
to simmer, stirring infrequently. Turn off the heat and stir in the
spinach and let it sit for about 2 minutes to wilt in the sauce.
Taste test and add more salt to taste or a squeeze of lime at the end
to bring out the flavours. Serve with your favourite starches and
even more greens and enjoy!!
